Zarda Rice Recipe | मीठे ज़र्दा चावल | Zafrani Zarda Sweet Chawal

Today we will prepare sweet pulao.
Sumptuous zarda pulao which is really yummy.
You will relish every spoonful of it.
To make Zarda Pulao,
we have taken 1 cup golden sella rice.
Soak it in lukewarm water for an hour then use it.
To make rice take a vessel filled with water.
we will prepare this rice in an open vessel.
We have taken almost 1 litre water in the vessel.
Turn on the flame.
Zarda pulao is made by adding food color.
If you add saffron instead of food color,
then you wont get the desired color,
Here we have taken 1/4 tsp orange red food color.
Cover the vessel so that it boils quickly.
Till the water boils , cut the dry fruits.
We have taken 1/4 cup cashews , 1/4 cup almonds,
Let's cut them .
Cut the cashews in two halves.
Cut the almonds into thin slices.
Do not make it too thin.
Cut all the cashews and almonds.
We have taken 6 small cardamoms,
peel them.
The water has started boiling.
Put the rice to boil in water.
We have removed the extra water.
Cover the vessel.
Check the rice after 5 minutes,
You need to keep the rice slightly less cooked.
You need to cook it 80 - 90 %.
Here we have 1/2 cup milk,
and 20 to 25 saffron strands.
Add it to milk and keep so that
saffron gives off color.
Stir the rice at regular intervals,
and check that the rice is not cooked too much.
Rice is cooked well.
It is 80 % cooked.
They can be easily pressed.
Turn off the flame.
We have placed a strainer over a bowl.
Pour the rice over it.
You can take and deep vessel or wok to make rice.
But make sure the base of the vessel is bit heavy.
Turn on flame.
Let it heat.
Grainy rice is ready.
It takes 15 minute to cook rice.
We have taken golden sella rice,
it takes a bit of time to cook.
If you take basmati rice,
it is cooked very fast,
so make sure it is not cooked too much.
The vessel is heated up.
Add ghee to vessel and let it melt.
Keep the flame medium.
add 1/4 cup coconut julienne,
add 1/4 cup cashews,
1/4 cup chopped almonds.
Roast it slightly.
Reduce the flame,
so that the dry fruits are roasted well.
Dry fruits have slightly turned brown
and we need it like this.
Take out a bit of dry fruits,
to use later for garnishing.
Flame is reduced to minimum.
Add cardamom seeds,
Add 4 cloves to it,
roast it slightly.
Dry fruits are roasted well.
Now add rice to it.
Keep the flame medium.
Add Sugar,
Mix all ingredients well.
We have taken 3/4 cup sugar.
You can increase or decrease the quantity as desired.
We have lightly mixed all the ingredients.
Now add saffron milk to it.
Pour the kesar milk on all sides like this.
Add 1/4 cup raisins too.
You can even roast the raisins
with dry fruits if desired.
Mix it well.
Now cover and cook the rice on very low flame
for 10 to 12 minutes.
Cook it.
Pulao is cooked for 12 minutes,
Turn off flame.
Cover and keep the pulao for 10 minutes
10 minutes are done.
Yummy pulao is ready
and is aromatic too.
Garnish the pulao with some dry fruits.
Zarda Pulao is ready to be relished,
and it is really sumptuous.
Making it is really easy.
Make sure, when youy cook rice,
add rice to cook only when the water is boiling.
Secondly, stir it at regular intervals and check,
as soon as the rice is ready,slightly less cooked,
turn off flame and strain the rice.
Then heat up the oil, roast dry fruits,
Mix rice, sugar and dry fruits
and cook rice for 10 to 12 minutes.
You will make yummy zarda pulao.
You can store Zarda pulao and relish it for 3 days.

Stir the rice at regular intervals,check if it is cooked well. Press and check one grain of rice. When rice is 80% cooked, turn of flame. Strain the rice from the water.We have place strainer over a bowl, then pour the rice over it.Rice is cooked in 15 minutes. 6. Take a heavy based vessel or wok. Turn on flame and let it heat. Add ghee, then add dry fruits, 1/4 cup coconut julienne, add 1/4 cup cashews, 1/4 cup chopped almonds. Roast it slightly and reduce flame. When the dry fruits are slightly roasted Take out a bit of dry fruits,to use later for garnishing. 7. Then add cardamom seeds, 4 cloves. Slightly roast it. Add rice to it, then add 3/4 cup sugar and saffron milk to it.Mix it well. Now cover and cook the rice on very low flame for 10 to 12 minutes. Then turn off flame.Cover and keep the pulao for 10 minutes then serve it. Serving: 8. Yummy and aromatic pulao is ready, Take it out in a bowl. Garnish the pulao with some dry fruits.
