Today, let's see how to make hot and spicy shengolya.
Winter is going on. If you want to make hot and healthy dish, then this is the perfect recipe.
Let's make dough for shengolya. Take 1/2 cup jawar flour in a dish.
In it add 1/4 cup wheat flour and 1 tbsp besan.
Let's add spices to it. 1/4 tsp ajwain, 1/4 tsp turmeric powder
1 tbsp garlic green chili paste. I have taken 7-8 garlic cloves and 1-2 green chillies
And blend it course in blender or blende it in a morter.
And salt to taste. Let's mix the spices with the flour.
When spices are mixed nicely with flour, add lots of coriander. Atleast 2-3 tbsp
Finely chopped coriander. Let's add water to this. Knead thick dough.
Add a little water at a time and make thick dough. I have kneaded thick dough here.
The dough should not be too thin. As when we drop the shengoli in gravy or tarri
They may open up. Try to knead the dough thick only.
Transfer the dough into a bowl, Cover and let it rest for about 10 minutes.
We are resting the shengoli dough. Let's see how to make gravy or tarri for this.
I am heating 1 tsp oil. Let's make tadka. To begin add with mustard,
When mustard pops up, let's add cumin seeds. Here mustard has poped up really good.
Let's add cumin seeds to this. Cumin seeds also should pop up nicely in oil.
Asafoetida. Now reduce the heat to low and add 1 tsp garlic paste.
1 tbsp goda masala and red chili powder. Add these spices on lower heat only.
Or tadka may burn. Mix well. Let's fry the masala for about a minute.
I receicve many questions regarding goda masala. What brand of goda masala should be bought?
Honestly I haven't used store bought goda masala as my mom gives me this masala every year.
My many relatives stay in different regions of Maharashtra. Like my aunt stays in Solapur.
She gives me nice solapuri masala. My mom in law stays in satara.
She gives me kolhapuri flavoured masala. My sister in law is from nagpur.
So I get readymade nagpuri masala at home. I get these masale from them every year.
So honestly, I haven't prepared goda masala myself in last 10 years.
But soon I will share goda masala recipe with you. I have fried the masala for 2 minutes.
Let's add 1 big glass water to it. Salt to taste and let it boil nicely.
You can see. This gravy is boiling nicely and also colour is really good.
Let's make shengolya quickly and drop them in this gravy.
Take the kneaded dough for shengolya, make small balls of it,
Small size, and roll it in elongated shaped shengolya.
You can make shengoli thick or thin as you want. Fold it in centre and roll it in shengoli shape.
Put them in a dish. Let's make all shengolya in similar way.
Take a vary small dough ball. Same as bittle nut size, or even smaller than that.
Roll the dough in hand, fold at the centre and seal both the ends together.
Here all shengolya are ready. 2 dishful. Gravy is also boiling nicely.
Let's drop the shengolya in the gravy. We can make shengolya enough for 2-3 people from this mixture.
Mix well once lightly. Cover and cook for 15-20 minutes till shengolya get cooked.
I have cooked shengolya on medium heat for about 15 minutes. The aroma is really tempting.
Let's see how is it. Woow.. Shengolya are cooked really good. You can see.
They have puffed up nicely. You can see. Gravy has become a bit thick. Though this looks a bit thin now,
It will become thicker as time passes. So I don't keep much less water in this.
Now last step. Add lots of coriander. I must try this. Woww..
It is really yummy. It is nice and hot. Flavour of garlic is really good.
You can have these shengolya as it is. Or you can add a little lemon juice on this.
You can add ghee on this too. It tastes awesome. Have with papad, pickle and onion. It tastes just yummy.
In tastes awesome during winter days.

You can have it as a dinner in winter. This is a one pot meal. You can call this as Maharashtrian pasta too. Let’s learn to prepare Shengole or shengule. Add wheat flour and besan. • Add ajwain, turmeric powder, garlic chilli paste and salt. Mix everything well together. • Add lots of coriander. Add a little water at a time and knead thick dough. • Don’t make the dough too thin. Let it be thick only. • Transfer the dough into a bowl, cover and let it rest for about 10 minutes. • Heat up oil in a pan. Add mustard and let it pop up. • Add cumin seeds and let them sizzle up. • Add asatoetida. Reduce the heat to low. • Add garlic paste, goda masala and red chilli powder. • Mix well and fry for about a minute. • Add water and salt. Let the gravy boil nicely. • Drop shengolya in boiling hot gravy. • Take one small ball of dough and roll it into shengoli. • Fold in the centre and seal both the ends together. You can make thick or thin shenghole as per your choice. • When all shengolya are ready drop them into boiling gravy. • Mix once lightly, cover and cook on medium heat for about 15- 20 minutes. • Add coriander leaves and shengolya are already. • You can have these shengolya as it is or add a little lemon juice. • Also ghee tastes best with this. • Serve this with papad, pickle and onion.
